“Eat balanced, natural and healthy”. You should have already heard of this topic. Gluten free
Gluten is an enzyme found in many foods, as well as wheat, barley, acronym, oats, breads, pastas, pizzas, and cakes. While gluten is generally well digested, some people may suffer from gluten intolerance or gluten allergy. The gluten-free designation is a legal label that is reserved for products containing less than 20 ppm (parts per million).
Lightened sugar
Since the 1980s, with the increase of sugar’s consumption, obesity and diabetes have become a major problem on a global scale. Pastry chefs are therefore seeking to make pastries with less sugar. Today they put about 85g of sugar per liter instead of 250g that were present in pastry’s cream at the beginning of 2000.
Chemical dyes free
There are also more and more confectioners who replace chemical dyes with natural ones. They use 100% vegetable, fruits, spices or flowers’ powders. For example, the yellow color can be obtained by mango and turmeric, green by matcha tea, red by raspberry.
